Why does it seem more "empirically" correct to "give credit to the farmer, the merchant, and the baker"? What is Heschel's answer for why we thank God instead?
How can we become more aware of all the people involved in the creation of our food? If we were more aware of this, how would our choices around food change?

We say 'Blessed be Thou, O Eternal our God, Ruler of the Universe, who brings forth bread from the earth.' Empirically speaking, would it not be more correct to give credit to the farmer, the merchant and the baker? [Rather] we bless God who makes possible both nature and civilization.

Our Rabbis taught this [in a Bereita]: The pious ones of old used to hide their splinters of wood and shards of glass and bury them [because they could cause damage] three handbreadths beneath the surface of their fields so that they would not impede the progress of the plow. Rav Sheshet used to throw them in a fire. Rava threw them into the river. Rabbi Judah said: a person who wants to be pious should attend to matters of liability. Rava said:to matters of Avot [ethical principles], or alternately, to matters of blessings. [translation by AJWS]

Rabbi Judah said: When a person goes out during the days of [the Jewish month of] Nissan and sees trees that are in bloom, say "Blessed is the one whose world lacks nothing and created in it good creations and good trees for the benefit of humanity."

אמר רב יהודה: האי מאן דנפיק ביומי ניסן וחזי אילני דקא מלבלבי, אומר: ברוך שלא חיסר בעולמו כלום וברא בו בריות טובות ואילנות טובות להתנאות בהן בני אדם.

Rabbi Ba the son of Rav Hiyya bar Abba teaches: If he ate while walking, he must stand and bless. If he ate standing, he must sit and bless. If he ate sitting, he must recline [formally] and bless. If he ate reclining, he must enwrap himself
and bless. And if he did this, he is like the angels who serve God.
